Mulling is the oldest idea in winter drinking: warm something alcoholic, add sugar and spice, and drink it before it cools. It began as a way to make rough wine palatable and survived because it turned out to be genuinely good.

Red wine is the familiar base, but almost anything mulls. White wine takes honey, ginger and cardamom beautifully. Cider and perry are lighter and suit a mixed table. Port gives you something richer in a smaller glass, and dark beer mulled with honey and orange is a real German tradition rather than a novelty.

These are the drinks that scale. Made in a pan or a slow cooker, held below a simmer, they will feed a room for an evening.
