This is the part of winter drinking that has changed most in the last few years, and the part that most recipe collections skip entirely.

The shift has been away from wine and cream and towards spirit-forward serves that are lighter, drier and quicker to pour. Warm spritzes, smoky mezcal with warm citrus, sake with ginger and yuzu, and ready-to-serve formats that need a pan and five minutes rather than a recipe and half an hour.

None of it is traditional. Some of it will not last. The best of it has already earned a place next to the mulled wine.
