Allspice
A single dried berry that tastes of cinnamon, clove and nutmeg at once — the workhorse of Caribbean rum punches and many spiced bitters.
Flavour profile
Allspice is the all-in-one spice when you are not in the mood to think about ratios. A few crushed berries in a pan of warm rum gets you most of the way to a proper spiced rum drink; pimento dram (the allspice liqueur) is the same idea in liquid form. Whole berries store almost indefinitely; ground allspice goes flat fast.
