Ingredients

  • 120 ml spiced or dark rum
  • 300 ml cloudy apple juice
  • 150 ml orange juice — freshly squeezed if possible
  • 20 ml lime juice
  • 30 g brown sugar
  • 1 cinnamon stick
  • 3 whole cloves
  • 3 allspice berries

Method

  1. Pour the apple and orange juice into a pan and add the cinnamon stick, cloves and allspice berries.
  2. Warm gently over a low heat and stir in the brown sugar until dissolved.
  3. Add the lime juice and let the spices infuse for a few minutes, keeping below a simmer.
  4. Pour in the spiced or dark rum and heat through to around 65°C without boiling.
  5. Strain into heatproof mugs and serve warm.
