Ingredients

  • 300 ml strong black tea, freshly brewed
  • 100 ml overproof rum
  • 100 ml red wine — optional, for body
  • 40 g caster sugar — adjust to taste
  • 2 lemon slices
  • 1 cinnamon stick
  • 3 whole cloves

Method

  1. Brew the black tea strong and pour it into a saucepan while still hot.
  2. Add the sugar, lemon slices, cinnamon stick and cloves, stirring until the sugar dissolves.
  3. Pour in the red wine, if using, and warm gently over a low heat; do not boil.
  4. Remove from the heat and stir in the overproof rum.
  5. Ladle into warmed heatproof mugs, leaving the spices behind, and serve at once.
