Apple and vanilla make a gentle, comforting pairing, the creamy warmth of the pod softening the bright fruit. This warm vanilla apple cider keeps things simple and alcohol-free, letting good cloudy cider do most of the work while cinnamon and orange add quiet winter spice. It is the sort of cup that suits a slow afternoon by the window.

Coaxing out the vanilla

A whole vanilla pod rewards a little patience. Split it lengthways, scrape the tiny seeds into the cider and drop the pod in too, so both the seeds and the husk perfume the drink. Warm everything gently and resist the urge to boil, as a low, steady heat draws out the vanilla and keeps the apple tasting fresh rather than stewed.

A cosy serve

Strain the cider before pouring so each mug is smooth and clear of spice, then finish with an orange slice and a cinnamon stick for a little flourish. It scales easily for a gathering, kept warm over the lowest heat. If you enjoy this spiced-apple style and fancy a grown-up version another evening, Hot Apple Gin takes the same warming apple character and gives it a spirited twist for festive occasions.

Frequently asked questions

Is this cider alcoholic?

No. This recipe uses cloudy non-alcoholic apple cider or plain apple juice, so it stays completely alcohol-free and suitable for everyone.

Can I use vanilla extract instead of a pod?

Yes. Stir in a quarter teaspoon of extract towards the end of warming, though a split pod gives a rounder, more fragrant result.

Why use cloudy cider rather than clear?

Cloudy cider has a fuller, more rounded apple flavour that stands up well to the vanilla and spice, giving the drink real depth.
