A hot cognac toddy is one of those drinks that asks for very little and gives back a lot. Five ingredients, a warmed glass and a few minutes of attention are enough to turn a wet evening into something more agreeable. The cognac brings dried fruit and oak, the lemon keeps things lively, and the honey ties them together without ever becoming sticky.

Why cognac works in a toddy

Whisky tends to dominate the toddy conversation, but cognac is arguably the more elegant match for honey and lemon. Its grape origins give it a slightly fruity character that the citrus highlights, and its softer profile means it does not fight with the cinnamon. A VS or VSOP grade hits the right balance: enough complexity to be interesting, not so much that you mourn the bottle being used hot.

The honey should go in first so it has time to relax in the warmed glass. Adding the lemon next thins the honey into a quick syrup, which then folds easily into the cognac. By the time the hot water arrives, everything is ready to combine without needing aggressive stirring.

Small details that lift the drink

Use freshly boiled water that has rested for half a minute. Pouring water straight from the kettle can flatten the cognac’s aromatics and shift the drink towards harshness. The cinnamon stick is more than a garnish; let it steep for a minute and it will give the toddy a gentle backbone of spice without taking over.

If apple-driven warmers are more your speed, the same comfort-and-citrus logic shows up beautifully in a Hot Apple Gin, which trades cognac for gin and water for warm apple juice.

For this toddy, a single thin lemon slice floated on top finishes everything off and perfumes the air around the glass as you drink.

Frequently asked questions

Which cognac grade should I use?

A solid VS or VSOP works perfectly. Save the older XO bottles for sipping neat; their nuance is lost in a hot drink.

Can I use lemon cordial instead of fresh lemon?

Fresh lemon makes a noticeable difference here, since the brightness is what balances the cognac and honey. Cordial tends to dull the finish.

Why rest the boiled water?

Water straight off the boil can scorch delicate spirits like cognac. A 30-second rest brings it down to a friendlier temperature.
