Maple syrup is honey’s North American cousin in winter cocktails. Pure maple - not “pancake syrup” - adds a woody, caramelised sweetness that bonds with bourbon and rye in particular. Grade A amber is the cocktail standard; the darker grades work for richer serves but can dominate. Use the same amount you would use of honey, then taste before reaching for more.
