Honey as a winter cocktail ingredient

Honey changes a cocktail more than sugar ever does — it brings body as well as sweetness, and a floral edge that pulls the whole drink together. For warm serves a simple runny honey is right; reserve chestnut, buckwheat or other strong-flavoured honeys for a drink where you actually want them tasted. A honey syrup (one-to-one with hot water, stirred until dissolved) keeps in the fridge for a week.
