Ginger as a winter cocktail ingredient

Ginger is the underused engine of half the warm winter cocktails worth drinking. A few thin slices of fresh root in the pan turn an ordinary mulled cider into something properly aromatic, and ginger syrup or a splash of good ginger beer is the cleanest way to brighten a hot toddy. Use fresh for warm serves and ground for batters (buttered-rum batter especially).
