Ginger
Fresh root for warm, dry-spiced edges; ground for baking-spice depth — ginger is the secret behind a good hot toddy and a winter mule.
Flavour profile
Ginger is the underused engine of half the warm winter cocktails worth drinking. A few thin slices of fresh root in the pan turn an ordinary mulled cider into something properly aromatic, and ginger syrup or a splash of good ginger beer is the cleanest way to brighten a hot toddy. Use fresh for warm serves and ground for batters (buttered-rum batter especially).
